Something happens to Cabo around 6pm.
The heat breaks. The light turns gold. The Sea of Cortez goes from bright blue to something deeper, like ink mixed with copper. Palm trees throw long shadows across the sand. And every restaurant with an ocean-facing terrace starts filling up with couples who are about to have the best dinner of their trip.
This is not a list of restaurants that happen to be open for dinner. This is a list of restaurants where the setting, the food, the service, and the mood combine into something that makes you reach across the table and grab someone's hand. These are the places where Cabo earns its reputation as one of the most romantic destinations in the Western Hemisphere.
We have eaten at all of them. Multiple times. Here is the truth about each one.
For the Sunset That Stops Conversation
Sunset Monalisa
Corridor | $$$ | Reservations Required
Built into the granite cliffs between Cabo San Lucas and San Jose del Cabo, Sunset Monalisa has arguably the most dramatic dining view in all of Mexico. The terrace faces directly west over the Pacific, and from about 5:30 to 7pm, the sky does things that would look fake in a photograph.
The Italian-Mediterranean menu is solid. The Chilean sea bass is the signature dish and it is reliably excellent. But I will be honest: you are not coming here for a culinary revelation. You are coming here because the moment that sun hits the horizon, the entire restaurant goes quiet for about ten seconds. People stop eating. Waiters stop walking. Everyone just watches. Then someone starts clapping and the whole terrace joins in.
That is the Sunset Monalisa experience. It is a scene, and it earns it. Book the terrace, not the indoor seating. If they offer you a table inside, wait for the next available outdoor spot. The whole point is the view.
Order: Chilean sea bass, the burrata, a bottle of something Spanish. Budget: $150-200 for two with wine. Pro tip: Arrive 30 minutes before sunset for cocktails at the bar. The pre-dinner drink with that view is half the experience.
The Ledge at The Cape
Corridor | $$ | 4.8 stars, 127 reviews
The Cape hotel is one of the most architecturally interesting buildings in Cabo. Rough concrete, floor-to-ceiling glass, and a rooftop that feels like it is hovering over Monuments Beach. The Ledge is its fine dining restaurant, and the terrace at sunset is extraordinary.
The food is more adventurous than Sunset Monalisa. The kitchen plays with Baja ingredients and Japanese techniques, which sounds like a gimmick but genuinely works. The tuna tostada is one of the best single bites in Cabo. The wagyu tataki is ridiculous. And the cocktails are serious.
Order: Tuna tostada to start, wagyu tataki, any fish of the day. Budget: $120-180 for two. Pro tip: After dinner, walk up to the rooftop bar for a nightcap. The view of El Arco lit up at night from up there is unforgettable.
For the Food That Makes You Close Your Eyes
Manta at The Cape
Corridor | $$$ | Reservations Essential
If you only eat one dinner in Cabo, make it Manta. Chef Enrique Olvera (of Pujol in Mexico City, consistently ranked among the world's best restaurants) created this concept, and it is the most interesting food in Los Cabos. Pacific Rim meets Baja Peninsula. Japanese precision meets Mexican soul.
The hamachi crudo is perfect. I have ordered it probably fifteen times and I have never considered ordering something else to start. The miso black cod melts in a way that should not be legal. The churros for dessert are a religious experience.
The setting is Monuments Beach at eye level. Waves crash maybe fifty feet from your table. On a calm night with the candles lit and the right person across from you, this is as good as dining gets anywhere in the world. I am not exaggerating.
Order: Hamachi crudo, miso black cod, churros. Skip nothing. Budget: $180-250 for two with cocktails. Pro tip: Book two weeks in advance during peak season (December-April). Walk-ins are possible on weekday nights in summer.
Cayao
Cabo San Lucas | $$$ | 4.8 stars, 310 reviews
Japanese-Peruvian fusion in a space that feels like it belongs in Tokyo's Ginza district. Cayao is currently the hardest reservation in Cabo, and it deserves to be. The ceviches are electric. The sushi is impeccable. The cocktail program is one of the best in Baja.
This is the restaurant for couples who care about food more than views. There is no ocean panorama here. The magic is entirely on the plate and in the glass. If your date is a foodie, this is the move.
Order: Nikkei ceviche, any nigiri, the Cayao roll. Budget: $140-200 for two. Pro tip: Sit at the bar if the dining room is full. You get to watch the sushi chefs work, which is a date experience in itself.
For the Setting That Does the Work
Edith's
Pedregal, Cabo San Lucas | $$ | Reservations Recommended
Edith's has been making people fall in love with Cabo for decades. Open-air dining on sand floors with candles in glass jars, live guitar music drifting through the warm air, and a mesquite grill that fills the space with woodsmoke. It is the most romantic atmosphere in Cabo, and it is not particularly close.
The menu is built around the grill. Grilled lobster tail, grilled catch of the day, grilled vegetables from local farms. Everything tastes like fire and sea and lime. The chocolate clam appetizer (yes, it is a real thing, named for its brown shell, not its flavor) is a Baja delicacy you cannot get anywhere else.
Order: Chocolate clam, grilled catch of the day, the coconut flan. Budget: $100-150 for two. Pro tip: Request a table in the back garden area, not near the entrance. It is quieter and more intimate.
Acre
San Jose del Cabo | $$$ | 4.7 stars, 3,392 reviews
A working organic farm with a treehouse bar and an outdoor restaurant under the stars. Acre is a 20-minute drive from downtown Cabo and it feels like you have left Mexico entirely and entered some Bali-meets-Tulum fantasy. The farm grows most of what appears on your plate. The cocktails use herbs picked from the garden that afternoon.
Dinner at Acre is a full evening experience. Arrive early, get a cocktail at the treehouse bar (which is an actual treehouse, thirty feet up in a Huanacaxtle tree), then walk the farm before your table is ready. By the time you sit down, you are in a completely different headspace than when you arrived.
Order: Whatever the kitchen is excited about. Trust the waiter. The wood-fired pizza is a safe bet. Budget: $120-180 for two. Pro tip: Go on a Thursday for the Art Walk combo. Gallery-hop in San Jose, then drive out to Acre for dinner.
For the Locals' Pick
Come a Casa
San Jose del Cabo | $$ | 4.9 stars, 482 reviews
A small Italian restaurant on a quiet street in San Jose that consistently ranks as one of the highest-rated restaurants in all of Los Cabos. The pasta is handmade. The wine list is thoughtful. The room seats maybe forty people and every table feels like you are in someone's home.
This is the date night for couples who do not need a view. The food does all the talking. The cacio e pepe is devastatingly simple and perfect. The tiramisu is the best in Cabo.
Order: Cacio e pepe, the daily special, tiramisu. Budget: $80-120 for two. Pro tip: This is a local favorite, not a tourist spot. It fills up fast. Book the day before or show up right when they open.
SAGE Baja
San Jose del Cabo | $$ | 4.8 stars, 910 reviews
Farm-to-table in the art district of San Jose. The interior is warm and modern with an open kitchen that lets you watch everything being plated. SAGE sources from local farms and the menu changes with what is available, which means every visit is slightly different.
The vegetable dishes here are genuinely exciting, which is rare for a town that runs on seafood and steak. The roasted cauliflower has converted people who thought they did not like vegetables. The cocktails are herb-forward and smart.
Order: Whatever vegetables are in season, the catch of the day, the mezcal sour. Budget: $80-120 for two. Pro tip: Sit outside on the patio if the weather cooperates. The San Jose evening air is slightly cooler than Cabo and it feels perfect.
The Honest Take
If money is not an issue and you want the most unforgettable night: Manta. The food is the best in Cabo and the setting is world-class.
If you want the most romantic atmosphere regardless of food quality: Edith's. The sand floors, candles, and guitar music create a mood that no modern restaurant can replicate.
If your partner is a foodie and cares about the plate more than the backdrop: Cayao. No contest.
If you want the full evening experience and are willing to drive: Acre. Treehouse cocktails, farm dinner, stars overhead. It is a complete date from 5pm to midnight.
If you want something quieter, more genuine, less scene-y: Come a Casa or SAGE Baja in San Jose. Better food-to-dollar ratio, easier reservations, and a more relaxed vibe.
All of them are available through our concierge team. We can make the reservation, arrange transportation, and even coordinate a surprise (flowers, champagne, a specific table) if you give us a heads up.
Because in Cabo, the dinner is never just dinner. It is the story you tell when people ask about the trip.
