The Cape hotel is a brutalist concrete masterpiece perched on the cliffs above Monuments Beach, and the rooftop sits at the very top, maybe eight stories up, with an unobstructed view of the Pacific, El Arco in the distance, and the most dramatic stretch of coastline in Los Cabos.
The cocktails are serious. Not resort-bar serious. Actually serious. The bartenders know what they are doing, the mezcal selection is deep, and they make a spicy margarita that has ruined every other spicy margarita for me permanently. The furniture is low and modern. The crowd is attractive and well-dressed without being pretentious. The music is lounge-y without being annoying.
Come at 5:30pm. Get a seat facing west. Order whatever the bartender recommends. Watch the sun drop. Stay for one more drink. This is the Cabo rooftop experience at its best.

Roasted sits above the main road with a rooftop terrace that catches both the sunset and the people-watching. The grill sends woodsmoke drifting through the air, which makes everything feel more intentional.
The cocktails are strong and reasonably priced (by Cabo standards). The food is better than it needs to be for a bar. The wine list is surprisingly thoughtful. And the service has that rare combination of attentive and relaxed that makes you want to stay longer than planned.
This is a great spot for couples, for small groups, and for anyone who wants a rooftop without a velvet rope or a bottle service minimum.

There is wine, there is beer, there is honest food, and there is a rooftop where you can watch the sun go down without anyone trying to sell you a bottle.
The wine selection is the real draw. It is one of the better curated wine bars in Cabo, with options from Baja, Spain, Argentina, and Italy. The bakery downstairs makes fresh bread daily. The vibe is neighborhood bar, not destination bar, which is exactly why it works.
What to order: A bottle of Baja wine and whatever looks good on the menu. Budget: $8-15 per glass. Pro tip: This is the spot for a quiet evening when you do not want to fight for a table at the tourist spots. Go on a Tuesday.
Drift Kitchen and Mezcal Bar

San Jose's answer to the Cabo rooftop scene. Drift is in the Art District, which means the crowd skews more creative, more chill, and slightly older than the marina strip. The mezcal bar is the main attraction, with one of the widest mezcal selections in Los Cabos. If you do not know mezcal, this is where to learn. The bartenders will walk you through the differences between espadin, tobala, and cuishe without being condescending about it.
The kitchen does elevated Mexican with live fire. The atmosphere has that fireplace-and-fairy-lights thing going on. On nights with live music, it is one of the best evenings you can have in San Jose.
What to order: A mezcal flight and whatever is coming off the grill. Budget: $14-20 per cocktail. Pro tip: Go on a Thursday during Art Walk season. Gallery-hop first, then end at Drift for mezcal and dinner.
Ilios

Mediterranean rooftop dining in Cabo. Ilios has a terrace with a view of the marina and the kind of white-linen, blue-accent aesthetic that makes you feel like you teleported to Mykonos. The cocktails lean Mediterranean: ouzo-based drinks, cucumber and herb infusions, citrus everything.
This is the date night rooftop. It is romantic without being try-hard. The lighting is right. The music is right. The food (Greek-Mediterranean with local seafood) is better than you expect from a place that looks this good. If Manta is booked and you want something special, Ilios is the backup that does not feel like a backup.
What to order: The grilled octopus, a Mediterranean cocktail, anything with seafood. Budget: $20-30 per cocktail. Pro tip: Book for 7:30pm. Late enough to catch the tail end of golden hour, early enough to get a terrace table.
